BOULOGNE / MER, a strategic geographical location, at the crossroads of the North/ South flow.

Date of creation: December 2002

Vivier Marins potential: 4500 tonnes of finished product

Actual workforce:  80 persons

Of which are 15 hand filleters

Volume 2009: 3670 tonnes of finished product

Of which 75% salmon and 25% white fish

Of which 35%   trays under protective atmosphere

Know-how

All operations on freshly fished fish and farmed-fish to customers’ orders  or for commercial outlets:

  • Filleting by hand
  • Trimming
  • Skinning
  • Boning by hand and machine
  • Cutting by hand and machine
  • Packing  in expanded polystyrene crates in ice
  • Packing  in atmosphere modified trays of 150G  to 2 kilos

Fish species worked

Farmed-fish:  Salmon, Cod, Bass, Bream, Sturgeon.

Freshly Fished:  Pollack, Ling, Cod, Bass, Halibut, Rose fish, Whiting, Swordfish, Grenadier, Emperor fish, Haddock.
